Parsnip "Chips"

Crispy parsnip "chips" are a great side with hamburgers. They are tasty simply salted or dipped in ketchup.

Ingredients
- (One or two per person) Parsnips
- (Enough to coats slices) Lard
Directions
Preheat oven to 350.
Peel and slice parsnips into coins like you would a carrot. I use a mandolin to keep the slices even.
Melt enough lard to coat your parsnips.
In a large mixing bowl, combine parsnips and melted lard. Mix to thoroughly coat.
Line a large cookie sheet with parchment paper.
Arrange the parsnip coins on the lined cookie sheet.
Bake for at least 20 min and then periodically check to see if they are done. Don't let them burn! Baking time will depend on the thickness of your slices.
Tip: You can bake them until almost done, then turn off the oven and leave them in the oven for 20-60 min. They will come out extra crispy!
