Sauteed Zucchini

Inspired by Lebanese Taverna's roasted vegetables (our favorite!), I made a few changes to make a quick and tasty version for home.

Ingredients
- (2-3) Zucchini
- (2 Tbsp) Beef Tallow
- (1/2-1 tsp) Dried Basil
- (1/2-1 tsp) Dried Oregano
- (1/4 tsp) Salt
Directions
Slice zucchini into 1 inch slices, then quarter and put in a bowl.
Melt tallow and pour over zucchini, stirring to coat all the pieces.
Add zucchini to a saute pan on high heat. Add basil and oregano. Stir occasionally.
When zucchini is lightly browned on the outside, it is finished. Sprinkle salt and stir to distribute.
*You can use any variety of herbs - like rosemary and thyme, or add some red pepper, to adjust the recipe to your tastes or what you have on hand.
*To be honest, I never measure the herbs or salt. I just go by how it looks relative to the amount of zucchini I have.
