Special on Chicken and Tasty Recipes!

Who doesn't love the tasty, juicy chicken our farmer provides? This week whole chickens are only $3.35/pound! WOW!!!! I read that as stock up now! This is an incredible deal on some good eating. With Valentine's Day around the corner, you can plan a special dinner from this week's special too.

Barbie shares two lip-smacking recipes that will be sure to please any tummy in this week's newsletter. I've put them below with links to ingredients you can get in the store.

Mexican Chicken Casserole

2 cups diced chicken
Several good-sized leaves kale or spinach
1 cup chopped onion
2 cloves garlic
1 6 oz can tomato paste
2 cups cooked beans, pinto or black
½ cup chopped peppers – mix of green and hot as desired
4 oz mozzarella cheese, grated
5 burrito sized flour tortillas
Olive oil
2 tsp cumin
Salt and pepper
¼ cup chopped black olives

Sauté the onion, garlic and pepper in oil until soft. Tear the greens in small pieces and wilt on top of the onion and garlic. Stir in the cooked beans, cubed chicken, cumin, salt and pepper. Set aside.

Add water to the tomato paste until sauce consistency (or use sauce). Add cayenne pepper or hot sauce. Plie the tortillas on a cutting board and cut into inch wide strips.

In a 2-quart casserole, layer the ingredients. Begin with ¼ cup tomato sauce. Cover with 1/3 of the tortillas. Cover with ½ of the chicken-bean mixture. Sprinkle with 1/3 cheese and black olives. Spoon on sauce to cover lightly. Follow with another layer of tortillas, chicken, cheese and sauce. Add another layer of tortillas, sauce and end with cheese.

Bake. Covered, in 350-degree oven for 30-40 minutes or until hot and bubbly. You may uncover the last 15 minutes if it isn’t browning. Let sit for a few minutes before serving. Serves 6.



Loaded Chicken & Potato Skillet

6 medium potatoes
6-8 strips bacon, cooked and crumbled
4-6 skinless, boneless chicken breasts, cubed
1 tablespoon olive oil
2 small onions, diced
2 red bell peppers, diced
2 green bell peppers, diced
4 cups Cheddar cheese, shredded
Sour cream
, optional
Green onion, optional
Salt and pepper, optional
Cajun seasoning, optional


In a large skillet, cook chicken until brown on both sides (no longer pink on inside). Remove from heat and cut into cubes. In the same skillet, heat olive oil and add onions and peppers. Add potatoes to the pepper/onion mixture and cook for another 3-5 minutes. Add Cajun seasoning, if desired, for extra kick.

Add chicken, bacon and cheese.

Cover skillet with a lid and remove when cheese is melted. Season with salt and pepper. Top with sour cream and green onions, if desired.

Small Family Farms vs. Industrial Farms - What's the Difference?

Farmer John shares a piece by another farmer who explains what is so different between the industrial farmer and the small family farmer that YOU have a special and direct relationship with. John shares his sentiments and thought he explained them so well that he sought fit to share them with his members. In this piece of reading you can learn what it is you can do to help make the small regenerative farmer better. You play an important role! Also, it is important to remember the many hats that your farmer wears. He may not be able to respond to your message immediately because he has to mend a fence while having other pressing matters on his mind. Continue to support your farmer, appreciate his hard work, and "hold him to high standards so that he is always striving for better services and products".
